This Glucoamylase Enzyme is designed for the saccharification of dextrins following mashing of grains, potato or any other starch-based substrate prior to ethanol fermentation. It is perfect for brewing a Brut IPA, hydrolyzing short-chain dextrins into fermentable sugars. It is stable up to 149°F (65°C), with optimal activity at a pH of 4.0-4.5 (it is stable between pH 2.8 and 5.0). It can process up to 20 lbs of dextrin, with maximum activity and stability when at least 50ppm of calcium ions are present.
